Still, a coarser grind or a natural casing that needs careful tension management works better with a slower, more controlled fill rate that the operator can set precisely without going over or under a fixed speed setting.
The foot pedal starts and stops the motor, so the operator never has to take their hands off the casing while it is being filled. Both hands remain free to guide the casing, control filling, and form sausage links. These are all jobs that require constant hand contact with the casing and cannot be stopped to use a hand-activated switch without losing the casing's position or tension.
The four stainless steel filling tubes cover inner diameters of ⌀0.55 in, ⌀0.79 in, ⌀1.18 in, and ⌀1.42 in, with corresponding outer diameters of ⌀0.63 in, ⌀0.87 in, ⌀1.26 in, and ⌀1.50 in. The smallest tube is for thin snack sticks and Italian-style sausages, and the largest tube is for thick bratwurst, kielbasa, and large-format fresh sausages. The included accessory set covers most residential and commercial sausage diameter needs.
The stainless steel tubes feature smooth, burr-free interiors. This prevents the natural casings from developing small tears during the fill phase, which occurs when the insides of tubes are rough. The finish on the inside of the tube also helps reduce meat buildup between fillings. The sealing ring around the plunger assembly makes tight contact with the barrel's inner wall as the plunger moves. This prevents meat from circling the piston and escaping past the plunger during filling under pressure. If there is no good seal, the dense or partially frozen meat blend pushes the meat past the plunger, making a mess on the machine and the nearby table and lowering the effective fill pressure sent to the tube.
During the filling cycle, the stable base keeps the machine firmly on the workbench surface, even at high pressure, while the plunger pushes down hard on thick, coarse meat blends that do not flow easily.
You do not need any tools to take the barrel, plunger, piston, and filling tubes off the machine and clean them after each batch. The design of the machine's removable parts, which can be washed separately under running water or in a dishwasher, lets you clean the insides you cannot reach when the parts are assembled on the machine.
