Ever since I spent an afternoon in a restaurant kitchen I have wanted pans like these to use for food prep. As prep pans they are easy to clean and the low sides make them easy to use, especially for the short person cook that I am. I am thinking about getting a set of the smaller, 1/3 size pans also. Note that the pans are made for steam table use but they are great for food prep, as I observed in the restaurant kitchen.
