I would be a little hesitant to use this for large commercial use. The reason is there is a slight gap from the stone in the bottom, and the steel sides. Where potentially there could be a hygiene problem. Also the width is perhaps a little on the low end for a "commercial" italian pizza. THAT said, if you are a private person - as myself, who want something better than a normal oven (or a "standard pizza oven from the local electric store", this is absolute a great option. Installation, is pretty much, remove some plastic protection for the stainless steel, put the stone in, fasten handle with screw and finally plug in, and you are up and running. The heating speed is fast. And it actually gives great control in relation to the upper and lower heating. I have experimented a little with making other things in the oven (with a low height), like chicken and spareribs, and my impression is it is a very dry heat (which is perfect for pizza), meaning a nice and crisp cooking. Which of course is perfect for italien pizza. I have also tried different "cheap" pre-made shop pizza dough, and the result is MUCH better than what I have achieved otherwise. So if you can live with having another reasonable big appliance in your kitchen, I can only recommend the product.
